This is a very simple pastry recipe that I use for all my sweet dessert pastry recipes. I was given it by my friend and neighbour Esther as part of the most delicious mince pie recipe that I now make every Christmas.  Popping it up today so I have it handy for the mini tart tin recipes coming right up!

175g (6oz) Plain Flour
60g (2oz) Caster Sugar
125g (4oz) butter
zest and juice of 1/2 a large orange

To make pastry, sift flour and sugar together. Add butter cut finely and rub in lightly until mixture resembles breadcrumbs. Stir in orange zest.
Using knife, stir in juice.
Gather up dough and pat into a ball. Wrap in film and refrigerate for at least 30 mins.
