chocolate mousse

I have said before, that when a meal or a day calls for chocolate, my go-to-girl is Nigella Lawson. I have used many of her recipes, and they have never let me down. This is a rich dark almost bitter chocolate mousse so small portions are perfect.  This recipe will make 4 bigger portions or 6 smaller ones.  On my list of things that I must try is to do a chocolate orange version of this! When I do I’ll let you know.

mini marshmallows
50soft butter
250good dark chocolate (minimum 70% cocoa solids) chopped into small pieces
60ml hot water (from a recently boiled kettle)
284ml double cream
1tsp vanilla extract

Melt together the butter, chocolate and marshmallows with the water in a pan over a gentle heat, stirring occasionally then remove from the heat.

While the chocolate mixture is melting together, whip together the vanilla extract and the cream.

Fold together the chocolate and cream until they are smooth and well combined.

Split the mix evenly between the 4 or 6 dishes you’re using. I used the small prep bowls, filling to 125ml for 6, or 175ml for 4 people.

Pop in the fridge and chill until serving time.
