I know it’s not picnic season, But this is the second of my planned-over recipes for left over chicken. It’s perfect to make to take into work for lunch until we get that glorious summer weather. It keeps really well for a couple of days in the fridge
If you haven’t got any planned-over chicken you can use pre-cooked chicken breast chunks, particularly good with the tikka flavoured bits if you can get them!
A bag of pre cooked noodles (you get them near to the stir fry veg in the supermarket)
Pre-cooked chicken breasts
Shredded white cabbage
3 or 4 Chopped spring onions
A handful of coriander leaves
Sweet chilli dipping sauce
1. Toss the noodles and veg together place the chicken breast on top
2. Drizzle the chilli sauce over and sprinkle the coriander over the top.
