This recipe is a family one, one Mr Kirsty’s dad makes often when we’re there, and one he was kind enough to share with me. It’s really really quick s0 suitable for mid-week pudding, which is brilliant. I hope you enjoy it as much as we do.
75g /3oz Self-Raising Flour
75g / 3oz Wholemeal Flour (or whatever combination you have to make a total of 6oz / 150g flour)
125g / 5oz Soft Brown Sugar
125g / 5oz Unsalted Butter
1 level tsp cinnamon
3 large eggs
3 Bramley Apples peeled, cored and cut into 1″ chunks.
Preheat the oven to 180c / 160 fan / gas 6
Chuck all the ingredients except the apples into a bowl and stir together until smooth, then mix in the apples! Chuck into a square baker and bake for 35 – 40 minutes, until risen, golden and a skewer inserted into the cake comes out clean. Serve with cream or ice cream.
