Day 5 – A Quick Dinner
Courghetti Spaghetti – or Zucchini Linguine if you’re Stateside
The zucchini is known as courgette on this side of the pond, but Courgette Linguine doesn’t roll off the tongue in quite the same way! I’ve made double portions of thisĀ in the Everyday RockCrok and it does JUST fit, but if you’ve got the Dutch Oven it might work a little better in that. Serves 2-3
1 Tbsp Oil
2 Cloves of garlic (sliced or crushed)
2 Courgettes
1 jar tomato based pasta sauce
Heat the oil in the RockCrok on the hob, then add the garlic. Fry the garlic until starting to brown.
While the oil is heating use the julienne peeler to cut the courgette into fine strips.
Add the courgette to the garlic and oil, and toss gently together.
Place into the microwave and cook for 2 minutes on full power.
Transfer back to the hob and add the jar of pasta sauce, heat through until piping hot.
Serve!
This is a fab recipe to throw left overs through, so far “planned over” chicken, roast beef and cooked
sausages have been stirred through with great success with the PamperedTeen and the Little Miss!
A fine grating of parmesan is makes a great topping, and you can bung the RockCroc under the grill to
toast off the cheese on top if you want.
