Poppy’s Chocolate Cake

250g self raising flour
6 tbsp cocoa powder
300g baking margarine (don’t substitute low fat spread)
300g soft brown sugar
2 tsp vanilla extract
6 large eggs
150g dark chocolate
150ml double cream
You can decorate the top with anything you like, here it’s “micro smarties” found in the home baking section.
Grease and line sandwich tins if necessary, and pre-heat the oven to 170c / 150 fan / gas 3
Sift the flour, cocoa and baking powder together to combine.
Cream the margarine and sugar until creamy, then add the vanilla and beat again.
Add the eggs and beat in one at a time, adding a tablespoon of the flour after each egg.
Gently fold in the rest of the flour and cocoa (easier said than done with a small helper!) before splitting between two sandwich tins.
Bake in the middle of the pre-heated oven for 40-45 minutes until a cake tester comes out clean.
Place the cream and chocolate into a glass bowl over a pan of JUST simmering water, and stir gently until the chocolate melts into the cream.
Once it’s combined place the ganache into the fridge and allow to cool, stirring from time to time, until it has reached a soft butter like consistency.
When the ganache is ready, put 1/3 of it as a sandwich between the layers of cake, and the other 2/3 to cover the rest of the cake.
Slice and serve and enjoy!
